Kue Ku, Kue Tradisional Berbentuk Cangkang Kura-Kura

Sahabat lensa44 sudah pernah mencicipi Kue Ku? Kue Ku merupakan jajanan tradisional berbentuk mirip cangkang kura-kura. Teksturnya yang kenyal makin menghidupkan kenangan lama tentang masa kecil. Isian Kue Ku biasanya kacang hijau.

Kue Ku biasa disebut juga Kue Thok. Meski dominasi Kue Ku berwarna merah, namun kini banyak juga Kue Ku dengan aneka warna-warni yang lucu dan memikat hati.

Dikutip dari berbagai sumber, Kue Ku atau Kue Thok berasal dari budaya Tionghoa. Di Tiongkok, Kue Thok atau Kue Ku kerap disebut sebagai ang ku kueh atau kue kura-kura merah. Hal ini merujuk pada cetakan Kue Ku yang memang menyerupai cangkang kura-kura.

Sementara warna merah merujuk pada warna kue ku, yang identik dengan warna tersebut. Selain itu, kata ‘Ang’ pada ang kue kueh sendiri berarti merah.

Dalam tradisi Tionghoa, khususnya Hokkien, kura-kura kerap dianggap sebagai lambang panjang umur dan kemakmuran. Hal ini merujuk pada keyakinan jika kue ini dapat membawa panjang umur, lantaran bentuknya serupa kura-kura.

Kue Thok atau Kue Ku terbagi dalam dua bagian dalam pembuatannya. Bagian kulit sebagian besar dibuat dari adonan tepung beras ketan dan ubi jalar. Sementara, bagian isi dibuat dari kacang hijau atau kacang tanah, serta gula, yang kemudian dihaluskan bersama.

Setelah diuleni, semua bahan dicetak dalam cetakan berbentuk kura-kura tadi. Kue Thok atau Kue Ku kemudian dikukus di atas selembar daun pisang hingga matang. (YM/L44)
